Amaranth was a staple food for the Aztecs. It has a nutty flavor and its yield is similar to that of rice or maize. Amaranth is nutritious and tastes between whole wheat or wheat berries. Pearl Wheat is produced from fully-matured soft white wheat that is then passed through a pearling machine. The pearling process removes the hull (the outer layer of the grain) from the kernel, which helps to lower the cooking time of the grains and extends their shelf life.
Essentially polenta is yellow and cooked maize meal with water, like porridge or as a base for toppings such as cheese, meat or vegetables. It can also be set in the refrigerator which produces a dough-like texture which is to be cut, moulded and grilled, or toasted in the oven.
