World Diabetes Day

World Diabetes Day is on 14 November 2018 and these are the scary facts. According to worlddiabetesday.org, the number of people with diabetes is expected to rise to 522 million by 2030, 1 in 2 people with diabetes remain undiagnosed and diabetes is a leading cause of heart disease, stroke, blindness, kidney failure and lower limb amputation.
The good news is that 80% of cases of type 2 diabetes are preventable by adopting a healthy lifestyle.
Food for a type 2 diabetic must include complex carbohydrates and are found in Pouyoukas Foods’ extensive range of whole food products. Ingredients
2 cups Pouyoukas lentils, prepared as per pack instructions
½ cup olives (optional)
½ cup onion, chopped
1½ cups cherry tomatoes, halved
½ cup green pepper, chopped
1 cup cucumber, diced
¼ cup feta cheese, crumbled
¼ cup fresh parsley, chopped
¼ cup oil
¼ cup lemon juice
1 tablespoon dried oregano
Method
- In a large bowl, combine lentils, olives, onion, tomatoes, green pepper, cucumber, feta cheese and parsley.
- In another bowl, mix together oil, lemon juice and oregano.
- Add dressing and parsley to lentil mixture and toss to coat.
